


Working with Thanksgiving Coffee, Wild Birds Unlimited has created
their own custom blend of Song Bird coffees!
This coffee is a blend of two Central American coffees. What we
were trying to accomplish with this blend was a taste that was
carmelly with a suggestion of cashew nut, sweet and lively on the
tongue, with a long buttery aftertaste.
To acheive these flavors, we blended a coffee from the Matagalpa
region of Nicaragua, roasted to a medium brown color and combined
it with a Guatemalan coffee from the Lake Atitlan region, roasted
light brown. We used the Guatemalan for the acidity (liveliness)
and the Nicaraguan for all the rest.
Both coffees are shade grown above 1200 meters, certified organic,
certified fair traded, and were produced by small-scale coffee
farmers and marketed through their cooperatives.
