Unfortunately, these days,modern mining techniques despoil the earth and surrounding riversand forests. The cultivation of high quality organic coffee hasbecome the key to Cajamarca’s economic and environmentalsustainability, and the farmers of CENFROCAFE are leaders in thiseffort.&lt;br /&gt;&lt;br /&gt;The members of CENFROCAFE carefully pick ripe cherries, depulp,ferment, wash and dry their coffee on their small farms ranging insize from one to three acres. Theirs is the story of acommunity who risked everything—their farms and theirlivelihoods—to build a more prosperous future, and peace.&lt;br /&gt;&lt;br /&gt;The 1,032 farmers of the Peace Kawomera Cooperative producebeautiful Arabica coffee on the slopes of Mt. Elgon, in EasternUganda. Each small farm ishome to a family, and on their small plots, often an acre or lessin size, the family produces beans, potatoes, plantains, and theeconomic lifeblood of their community, coffee.
